Pho Bo (Vietnamese Beef Noodle Soup) Recipe:

Ingredients for Broth:

  • 2 large onions, halved and unpeeled
  • 1 4-inch piece of ginger, sliced
  • 3-4 lbs beef bones (marrow and knuckle bones)
  • 1 lb beef brisket or sirloin, thinly sliced
  • 1 cinnamon stick
  • 3 star anise
  • 3 cloves
  • 1 cardamom pod
  • 1 tablespoon coriander seeds
  • 1 tablespoon salt
  • 1-2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 4-5 quarts water

Ingredients for Serving:

  • Flat rice noodles, cooked according to package instructions
  • Bean sprouts
  • Fresh basil leaves
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Thinly sliced green onions
  • Lime wedges
  • Red chili slices (optional)
  • Hoisin sauce (optional)
  • Sriracha or chili sauce (optional)

Instructions:

  1. Broil the Onions and Ginger:

    • Preheat the broiler. Place the onion halves and ginger slices on a baking sheet.
    • Broil until the onions and ginger are charred, about 15-20 minutes.
  2. Prepare the Beef Bones:

    • Rinse the beef bones under cold water. Place them in a large stockpot and cover with water.
    • Bring to a boil and boil vigorously for 10 minutes. Discard the water and clean the bones.
  3. Simmer the Broth:

    • Fill the stockpot with 4-5 quarts of fresh water. Add the cleaned beef bones, charred onions, ginger, cinnamon stick, star anise, cloves, cardamom pod, coriander seeds, salt, fish sauce, and sugar.
    • Bring to a boil and then reduce heat to simmer. Allow the broth to simmer for at least 1.5 to 2 hours, skimming off any impurities that rise to the surface.
  4. Prepare the Beef:

    • Slice the beef brisket or sirloin thinly. You can partially freeze the beef to make slicing easier.
  5. Strain the Broth:

    • After simmering, strain the broth through a fine mesh sieve or cheesecloth. Discard the solids.
  6. Assemble the Bowls:

    • Cook the rice noodles according to package instructions. Place a handful of noodles in each serving bowl.
    • Add slices of raw beef on top of the noodles.
  7. Serve:

    • Pour the hot broth over the noodles and beef, ensuring that the beef cooks in the hot liquid.
    • Serve the pho with bean sprouts, basil, mint, cilantro, green onions, lime wedges, and optional condiments like hoisin sauce and sriracha on the side.
